Instructions:
1. In a large bowl, combine the ground beef, Honey Chipotle BBQ Rub, Birria Fiesta Taco Blend, Worcestershire sauce, and salt. Mix gently with your hands until just combined, being careful not to overwork the meat.
2. Divide the mixture into 6 equal portions and form into patties about 1/2 inch thick. Press your thumb into the center of each patty to create a slight indentation (this prevents the burgers from puffing up during cooking).
3. Cover the patties and refrigerate for at least 30 minutes to allow the flavors to meld.
4. Meanwhile, prepare the Fusion BBQ Sauce by combining all sauce ingredients in a small saucepan. Simmer over low heat for 10-15 minutes, stirring occasionally, until slightly thickened. Remove from heat and let cool.
5. Preheat your grill to medium-high heat (about 375-400°F). Oil the grates to prevent sticking.
6. Grill the burgers for 4-5 minutes per side for medium doneness, or adjust cooking time to your preferred level of doneness.
7. During the last minute of cooking, top each burger with a slice of pepper jack cheese and close the grill lid to allow the cheese to melt.
8. Toast the hamburger buns on the grill for about 30 seconds.
