Ingredients:
- 4 salmon fillets (6 oz each), skin on
- 2 tablespoons vegetable oil, divided
- 1 tablespoon Shichimi Togarashi Fusion spice blend
- 1 tablespoon Smoky Honey Habanero Rub
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
For the Bowl Base:
- 2 cups cooked short-grain rice
- 2 cups baby spinach
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1 cup edamame, shelled and cooked
- 4 radishes, thinly sliced
- 2 green onions, sliced
For the Spicy Fusion Sauce:
- 1/4 cup mayonnaise
- 1 tablespoon sriracha
- 1/2 teaspoon Shichimi Togarashi Fusion spice blend
- 1/2 teaspoon Smoky Honey Habanero Rub
- 1 teaspoon lime juice
For Garnish:
- 1 tablespoon sesame seeds
- Lime wedges
- Microgreens (optional)
Instructions:
1. Preheat oven to 400°F (200°C).
2. In a small bowl, combine 1 tablespoon vegetable oil, Shichimi Togarashi Fusion spice blend, Smoky Honey Habanero Rub, honey, soy sauce, rice vinegar, and sesame oil to create a glaze.
3. Pat the salmon fillets dry with paper towels. Heat the remaining tablespoon of vegetable oil in an oven-safe skillet over medium-high heat.
4. Place the salmon skin-side down in the hot skillet and cook for 3 minutes until the skin is crispy.
5. Brush the top and sides of the salmon generously with half of the spice glaze. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the salmon is just cooked through but still moist.
6. While the salmon is cooking, prepare the spicy fusion sauce by combining all sauce ingredients in a small bowl. Mix well and set aside.
7. During the last 2 minutes of cooking, brush the salmon with the remaining glaze.
8. To assemble the bowls: Divide the rice among four bowls. Arrange the spinach, avocado, cucumber, carrot, edamame, and radishes around the rice.
9. Place a glazed salmon fillet on top of each bowl. Drizzle with the spicy fusion sauce and sprinkle with green onions and sesame seeds.
10. Garnish with lime wedges and microgreens if using.
