Ingredients:
- 2 lbs large shrimp, peeled and deveined (tails on)
- 3 tablespoons olive oil
- 2 tablespoons Smoky Honey Habanero Rub
- 2 tablespoons honey
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 teaspoon lime zest
- 1/4 cup chopped fresh cilantro
- Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
For the Smoky Honey Habanero Dipping Sauce:
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon honey
- 1 teaspoon Smoky Honey Habanero Rub
- 1 tablespoon lime juice
- 1/2 teaspoon lime zest
- Salt to taste
Instructions:
1. In a large bowl, combine olive oil, Smoky Honey Habanero Rub, honey, lime juice, minced garlic, and lime zest. Mix well to create a marinade.
2. Add the shrimp to the marinade and toss gently to coat evenly. Cover and refrigerate for 30 minutes to 1 hour (don’t marinate too long as the lime juice will start to cook the shrimp).
3. While the shrimp is marinating, prepare the dipping sauce by combining all sauce ingredients in a small bowl. Whisk until smooth and refrigerate until ready to serve.
4. Preheat your grill to medium-high heat (about 375-400°F).
5. Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer, leaving a small space between each shrimp.
6. Oil the grill grates to prevent sticking. Grill the shrimp skewers for 2-3 minutes per side, or until the shrimp are pink, opaque, and slightly charred.
7. Transfer the grilled shrimp skewers to a serving platter and sprinkle with fresh cilantro.
8. Serve immediately with the Smoky Honey Habanero dipping sauce on the side.
