Make it happen.
Rub & rest
30 minPat the chicken thighs completely dry with paper towels — dry skin is the whole game here. Rub them lightly with olive oil.
Season all over with the Honey Chipotle BBQ Rub, getting under the skin where you can. Let the thighs sit at room temperature for 30 minutes so the rub pulls moisture out and forms a tacky crust.
Grill
~14 minHeat a grill for two-zone cooking: one side hot, one side with no flame underneath. Clean and oil the grates.
Place the thighs skin-side down over the cooler side, close the lid, and cook for 8 minutes.
Flip and move to the hot side. Grill 4–6 minutes more, until the skin is crisp and the thickest part reads 175°F. Skin flare-ups mean the fat is rendering — slide the thighs back to the cool side if it gets aggressive.
Glaze & serve
~5 minWhisk the honey and apple cider vinegar together and brush over the thighs in the last minute of cooking.
Rest 5 minutes, then finish with a squeeze of lime and chopped cilantro.
