The method

Make it happen.

  1. Dry & coat

    10 min

Dry the wings thoroughly — moisture is the enemy of crisp skin.

  2. Toss with the baking powder, 1 tablespoon of Nashville Heat Wave, and the salt until evenly coated. The baking powder raises the skin's pH so it browns and blisters instead of steaming.

  3. Air fry

    ~25 min

Arrange in a single layer in the air fryer basket, leaving space between pieces. Cook at 380°F for 12 minutes.

  4. Flip, raise the heat to 400°F, and cook another 10–13 minutes until deeply golden and crackling.

  5. Toss in spice butter

    ~3 min

Melt the butter with the remaining tablespoon of blend and the honey, stirring until it goes glossy and red.

  6. Toss the hot wings in the spiced butter and serve straight away with celery and blue cheese.
