The method

Make it happen.

  1. Rub & rest

    20 min–overnight

Pat the pork shoulder dry and score the fat cap in a crosshatch, cutting about a quarter inch deep.

  2. Rub the salt and 1/4 cup of Smoky Honey Habanero Rub over every surface, working it into the scores. Rest 20 minutes, or wrap and refrigerate overnight for a deeper cure.

  3. Slow cook

    8 hrs

Scatter the onion across the bottom of a slow cooker and pour in 1/2 cup of the vinegar and the stock. Set the pork on top, fat-side up.

  4. Cook on low for 8 hours. It's done when the blade bone pulls clean out with no effort — time is a guide, the bone is the truth.

  5. Sauce

    ~10 min

Skim the fat from the cooking liquid, then simmer 1 cup of it with the remaining vinegar, honey, brown sugar, and 1 teaspoon of rub for 8–10 minutes until it coats a spoon.

  6. Shred & dress

    ~10 min

Shred the pork with two forks, discarding large fat pockets.

  7. Moisten the meat with a few ladles of the defatted cooking liquid first, then fold through the sauce to taste.

  8. Pile onto soft rolls with slaw.
