Make it happen.
Trim & rub
20 minHeat the oven to 275°F. Flip the racks bone-side up and slide a butter knife under the thin membrane at one end, then pull it off with a paper towel. Skipping this leaves the ribs chewy.
Smear a thin coat of mustard over both sides — it's a binder, you won't taste it.
Season heavily on both sides with the Honey Chipotle BBQ Rub. Let the racks sit 20 minutes until the rub looks wet.
Bake uncovered
2 hrsSet the racks meat-side up on a foil-lined sheet pan and bake uncovered for 2 hours.
Wrap & braise
1 hrLay out two large sheets of heavy foil. Put a rack on each, meat-side down, and add the butter pats and half the apple juice to each packet. Seal tightly.
Return to the oven for 1 hour. The ribs are ready when a toothpick slides into the meat between the bones with no resistance.
Sauce & finish
~20 minMeanwhile, simmer the ketchup, honey, apple cider vinegar, and 1 teaspoon of rub in a small pot for 5 minutes until glossy.
Unwrap the ribs — careful, the steam is serious — and brush with the sauce. Finish under a broiler or over a hot grill for 5–8 minutes, until the glaze tightens and darkens at the edges.
Rest 10 minutes before slicing between the bones.
