Ingredients:
- 4 boneless, skinless chicken breasts (about 2 lbs)
- 3 tablespoons Honey Chipotle BBQ Rub
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 lime, juiced
- 1/4 cup chopped fresh cilantro (optional, for garnish)
For the Honey Chipotle BBQ Sauce:
- 1 cup ketchup
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 2 teaspoons Honey Chipotle BBQ Rub
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions:
1. In a large bowl, combine the Honey Chipotle BBQ Rub, olive oil, honey, apple cider vinegar, and lime juice to create a marinade.
2. Add the chicken breasts to the marinade, turning to coat evenly. Cover and refrigerate for at least 2 hours, or preferably overnight.
3. While the chicken is marinating, prepare the BBQ sauce. In a medium saucepan, combine all sauce ingredients and bring to a simmer over medium heat. Reduce heat to low and cook for 15-20 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and let cool.
4. Preheat your grill to medium-high heat (about 375-400°F). Oil the grates to prevent sticking.
5. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F.
6. During the last 2-3 minutes of cooking, brush the chicken with the prepared BBQ sauce, turning once to coat both sides.
7. Remove the chicken from the grill and let rest for 5 minutes before serving.
8. Serve the chicken with the remaining BBQ sauce on the side and garnish with fresh cilantro if desired.
